I have had some aluminium thrower knobs made. Is it best to leave theses as they are or paint them silver.

No need to paint them silver, can’t imagine why you’d want to. You can leave them as they are, add a black/brown wash to them to make them look dirty, use etching solution to age them, a rock tumbler to weather them etc etc.
